Doesn’t that sound yummy? If you have asthma – maybe not so much.
A study published in the British respiratory medicine journal Thorax just prior to Christmas concluded that consuming more than four portions of cured and processed meat per week – such as ham and salami – may worsen asthma symptoms. The data suggests that nitrite, a preservative used in processing meats such as sausages, salami, and ham, may aggravate airways. However, researchers cautioned that the link has not been proven and recommended additional study. Relying on self-reporting among participants in the French Epidemiological study on the Genetics and Environment of Asthma (EGEA), the study essentially scored “cured meat intake (ham, sausage, salami)” as it coincided with worsening asthmatic symptoms. The study found that, after accounting for other “potentially influential factors, such as smoking, regular physical activity, age, sex, and educational attainment, those who ate the most cured meats were 76% more likely to experience worsening asthma symptoms than those who ate the least.”
Although this is only an observational study from which “no firm conclusions can be drawn about cause and effect,” the results seem compelling enough to consider including “number of trips to Subway” in a patient’s bedside assessment.
